Can someone tell me how to use italics, bolding, underlining or create a live URL in Canvas email?

I don't use the Inbox much, but based on responses I've seen here, I think the answer is that the Canvas Inbox is not set up for that type of formatting. It is not a true email service but rather is a simplified communications service.
Perhaps you could achieve your goal by attaching a file containing the formatting and links you would like to use:

Totally agree with everything that @TrishaMeyer1 has stated. I'll just add that there's an existing Idea here in the Community that has lots of feedback and support for adding the RCE (Rich Content Editor) to the Canvas Inbox:

This particular Idea is part of a larger Theme called:

I'd encourage you to follow both of these so that when/if this opens for voting, you'll be able to participate in that process and have those conversations.
