How do you delete people from a module? for example someone who has retired or left the company

This will depend slightly on how permissions are configured in your Canvas environment. If teachers are allowed to add/remove other teachers, then anyone else with a teacher role in the course could visit the people tool, click the three dots on the right hand side of a row, and remove the person from the course. If teachers aren't allowed to do that (which is the case for my institution), on your local Canvas team (with admin access) would need to remove the person from the course.
