Is it possible to preview submissions as a student before submitting? This would be a very useful feature

Could you clarify what you mean? Do you mean as instructor preview student submissions, or a student can preview their own submissions?
If it's the first and you have Google Assignments LTI 1.3 turned on you can create a doc, slide, or sheet for students to work off of. Using Google Assignments LTI 1.3 each student will have their own copy of the doc, slide, or sheet and you can view the document and what work they have done before submitting it to you. You can even give feedback (comments) as well before they submit.

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
