Is there a way to copy rubrics from one of my course to another course?

Yes, when you're adding a rubric to an assignment, you will see an option to "Find a Rubric" in another course

In addition to the method @jerry_nguyen outlined, you can also import rubrics from one course into another using the course import tool and selecting specific content (just select the rubrics from the options that appear when you're selecting content).

The "Find a Rubric" feature isn't a great option since when it brings up the locations of rubrics, the pop-up window has course numbers, but not the related term. So, it's a time-consuming guessing game to locate the right rubric.
