Yes...you should be able to access unpublished modules at a later time in your course. If this is a concern, you could copy/import your modules into a separate sandbox course (a blank course shell) and keep a copy of your modules there in case you ever needed them. Or, you could even share all or part of your course to Canvas Commons so that it's available to you when you need it. Just thought I'd throw out a couple options if preserving your modules was the basis for your question. Hope this helps in some way. Sing out if you have any questions...thanks!
YES!!! You, as the instructor, of the course will have access to your modules, regardless of whether they are published. Publishing / unpublishing modules affects whether your students can access them. As the instructor of the course, you will absolutely retain access to them.
Once your course has ended, your modules will become "read only." You'll need to import your modules into either new course shells or development ("sandbox") courses in order to edit them.
Unless you'd like to share your materials with others, you don't need to do anything with Canvas Commons.
