I would like to limit access to videos or files to specific students our groups of students. If there was way to designate this in my Canvas course?

One way to do this is to create groups in Canvas and then assign students to those groups. They would then go into their own group (which has a similar layout to a course) where there is a separate "Files" area, and you could also put some videos in there if you wanted to only share with that group of people.
First, you'd need to set up a "Group Set" within your "People" page. You could call this whatever you want...like the name of an assignment, for example. Then, within the "Group Set", you would set up the different groups. You might have a team name or team color for each group...like "Blue Group" or "Red Team". Then, once you have those groups set up, you can put your students into each of those groups. In fact, there could be just one student per group if you really needed to do that.
