I know that Canvas can export a single gradebook, but if I want to export multiple gradebooks simultaneously, how can I? I'm contemplating this in the context of archiving gradebooks for multiple courses.

Unfortunately Canvas does not have a lot of multi-course functionality built in like you describe. However, that is an excellent suggestion for an improvement to Canvas. I hope you decide to submit an idea via the process described on the Canvas Ideas and Themes page.
There might be a way to do this using an API call. I lack that expertise but hopefully our colleagues in the community who do will see your question and share their expertise.
How can you mark this as a "SOLUTION" ? it's not a solution it's jsut a wish.
