I was wondering if there was a way to leverage either New Analytics or Canvas Data to find out which instructors are utilizing the grade book within their canvas course.
I'm not sure about finding out which instructors are using it, but you can find out which courses are using it from Canvas Data. I use the new Admin Analytics feature, filter by term, and go into the "Course" dashboard. There, you can see how many courses are using specific Canvas functions. If you click on the bar for the specific function you are interested in (in this case, Grades), you can download a spreadsheet that lists all the course names/IDs. If your institution uses instructor names in the course titles, then you'll quickly have that instructor list. If not, then you would need to do some backend work to get the instructor list for the applicable courses.

I am glad to hear that you had some success with @JessicaDeanSVC's suggestion. If you were to share the csv files you generated (assuming they do not contain sensitive information) then someone in the community might be able to advise on some kind of formula or other sorting method to really break down the comparison. Otherwise you could reach out to your CSM to see about what custom reporting might be available.
