While I have set the correct timezone in the course settings (Eastern), student accounts default to Mountain (in Free for Teachers). So do the assignment due-dates automatically compensate for this? We're all in Eastern Time.

I recommend that you let your students know as soon as possible that they set their own time zone so they have an accurate display of when assignments are due to be submitted to you. For students, you can give them a link to this Guide:
For you (instructor), there should be two places that you can set time zones. One is at the course level. The other is at your user account level. So, for example, since you live in the Eastern Time Zone, you would set both to "Eastern Time".
If you had a student taking your course that lived in the Central Time Zone, for example, the student would set the time zone appropriately, and Canvas would figure all of that out so there is no confusion.
