How do I archive past classes so they are not present any more on my Published Course dashboard?
Very easy.
You will still be able to access the old courses, by click on "Courses" in your Global Navigation Bar. Then click on "All Courses" and look for your "Past Enrollments."

I'm a little late to this, and I'm not sure if this answers your question, technically speaking. But Instructure introduced a brand new solution, Canvas Archiving, that allows institutions to back up their courses, reduce clutter, and secure sensitive student data. The content can easily be accessed and retrieved at any time. Thanks.
