Canvas allows users to set the grading scheme of their choice. These guides might be helpful:
Note that your institution might limit your ability to alter grading schemes/scales. These settings can be dictated at the account level if your institution wants everyone to use the same grading scheme.
Canvas does not "inflate" any grades because the grades are calculated based on the grading scheme chosen by the user or institution.
