I am staying at the same College but changing jobs. How can I remove myself from Canvas courses? I have a teacher title in the courses. I can remove others but do not see an option to remove myself. Thoughts please?

I'm going to say that in a majority of situations like this, access will automatically change via an integration with your college's student information system once your new role is entered and new instructors are assigned to the courses. For situations where that doesn't happen, I'd recommend reaching out to your college's Canvas administrator(s), usually located in the IT / eLearning / Digital Education areas.
