I have courses from past semesters I am not teaching now. How do I Unpublish them?

Per the final bullet point in the light-blue box at the top of this Guide: How do I publish a course? - Instructure Community (canvaslms.com):
If your course has been published and includes grades, you cannot modify the course's published status.
You can, however, un-favorite these courses so that they do not show up on your Dashboard. Just remove the star next to a course name on this screen:
