Full discloser, the most experience I've had with the Gradebook is as a Canvas administrator rather than an instructor, so I have not used the Gradebook exclusively to grade students since I've not taught courses in Canvas. That being said, I wonder if a missing assignment policy or a late assignment policy might work for your needs? Here are a couple Guides that might help to answer your question:
