Welcome to the Canvas Community. I'd be happy to help! I guess the first question I have for you is...do you know if you are using the current Classic Quiz interface, or are you using the New Quiz interface? The easiest way to determine this is on your "Quizzes" page of your course. Each of your quizzes will have a rocket ship icon to the left of the quiz name. Is the rocket ship icon white or black? If it is white, then it is a Classic Quiz. If it is black, then it is a New Quiz. Also, here are two short video tutorials on both versions of Quizzes that will also be of great help:
