Is there a way to have an instructor showcase an assignment post from a student. Ex: An oil painting instructor wants to give a gold star to a student's work and have all the students in the class see that work.

There is no way that you can directly share submitted work from a student submission in Canvas with the rest of the class. However, assuming that the student was ok with you sharing the artwork with the rest of the class, you could create a discussion topic for your course so that the class could leave a comment about it. Or, if you did not want students to leave comments, you could just create a simple content page and embed the artwork image on that page.
