Answer key for assignments that students do not see?

I know that you can create rubrics, but I’ve realized students can see the rubric before completing the assignment. I’d like to have grading notes for something more holistic, like when I am asking students to complete questions and I need the answer key to grade them. Frustrating to have to have multiple windows open to grade, especially on an iPad,

As far as I know you cannot do this for assignments in general or with rubrics.
