Is there a way to set quizzes to anonymous grading as you can for assignments?
It looks like this is not an option when creating a quiz, @Falce-RobinsonJ. However, the grader can select the option to hide student names on the SpeedGrader.
If you want the grading to be anonymous from the moment the assessment is created, a better option is to remove any essay questions from the quiz and make them Assignments. That might not be practicable but it would preserve anonymity.
If you don't have the option to do this, you may need to ask your Admin team to enable anonymity in your courses at the account level.
