one child has graduated so i no longer need to see him in Canvas - how do i delete him so i only see the current active student?

You can view this setting under Observing.
The How do I link to a student? lesson will help you! Once you click Remove, that student should be disassociated with your account.
If your school created your account for you using their Student Information System, the link may be restored. If that's the case, please reach out to your district directly for more assistance. They'll be able to separate your email from the student's account.
