I do not want my students to see their grades until I send them their grade card. Is this something I can control through settings?

What @Chris_Hofer gave you deals with hiding the assignment grades overall.
Based on your post, I wasn't sure if you meant that you wanted to hide all the assignment grades from the students. Or if you wanted to hide just the final course grade.
If it is just the final course grade, the only way I know how to do that is hide the grades for all the assignments - meaning you should change the grade reporting to manual for all your assignments - fortunately you can do this for the course and any assignments created after setting the course grading method will use that method.
