Annotation Assignment Documentation

I can't find the "official" documentation on how to create an Annotation Submission assignment. I've been telling instructors about this Assignment type and want to link them to some documentation on it, but if the documentation exists, I can't seem to find it.

This would be nice to have, as Annotation Assignments are useful in the modern age of AI, and difficult for students to work around with the help of a chat bot.

@DanHahn This one was hard to find. I easily found instructions for students to complete an annotation assignment, but creating an annotation assignment was a bit buried. I found it on the page about creating an online assignment.
