I accidentally reassigned an assignment to a student. How do I unreassign it? I do not need the student to redo it.

If using the Assign To feature, you can delete the name of your student under the assign to box by clicking the X next to their name. This will only work if it is assigned to a student specifically, and not to their entire section.
