How can I remove a course from Canvas that I am not teaching?

You will need to contact your Admin and ask them to deactivate you from the course. Then it will not appear in your dashboard.
Alternatively, you can click into Courses from your navigation menu, click All Courses and unfavourite the course. This should then remove the course from your dashboard.

If you have permission to do it, faculty at my institution cannot, it is also possible to delete a course. There is a How do I delete a course as an instructor? - Instructure Community - 1181 guide that explains how to do it.
