Is there a limit on the number of observers that can be linked to a student?

This Guide doesn't specifically give a number, but if you look under the section "Link Student" and below the screenshot, it says, "You can link additional students to the observer, if necessary."
How do I link a student to an observer in a course?

In addition to the information provided to you by @Chris_Hofer , I just wanted to add on that I know people that have been linked as an observer to 20+ students. This was mainly for tutors or learning support staff, but it's definitely possible.

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
