Is it possible for Canvas to have an "Copy to All" button for assignments, modules, files, etc? Or a select dropdown menu to choose classes?

This would probably be a new feature request to have this kind of functionality within Canvas...where you could place a checkmark next to "x" number of courses and the content would automatically be imported (copied) into those courses. All that being said, I do have one work-around for you to consider. You could use Canvas Commons to accomplish something similar to what you are requesting. You would either share an entire course to Canvas Commons, or you could share just parts of a Canvas course to Canvas Commons. Once the course and/or the individual parts are shared to Canvas Commons, you would import that content from Commons instead of importing directly from the course. You'd need to enroll yourself as the instructor in any of the courses you wanted to import that content from Commons into...because you'll have an opportunity to select multiple courses all at one time...as you are hoping to do. I'm not sure how much you've used Commons in the past, but I wanted to just point out that if you do share an entire course to Commons, you cannot then choose parts of that course you've shared to import into other courses. Those other parts of the course must be first shared separately to Commons, and then you can import them to the other courses...similar to how I described importing the full course from Commons.
