Has anyone found a method whereby 'in class' immediate feedback can be provided directly onto students work as they produce their responses.

Our school has recently started using H5P (https://h5p.com/ ) to create interactive assessments that give immediate feedback within Canvas courses. They can also be set as assignments in Canvas, so students receive a grade. It does require integration on the Canvas side, though.
We are using the paid version, but there is also a free version that might be worth checking out: https://h5p.org
