I have Latin quizzes posted in Assignments. The students can download , fill in the answers and then upload.
But I have 35 Units of quizzes and I would like to store the answers with the quiz WITHOUT THE STUDENTS BEING ABLE TO SEE THE ANSWERS.

Yes, depending on the question types that are in your existing quiz, you can do this. There are two version of quizzes in Canvas: Classic Quizzes and New Quizzes. Both version offer a variety of question types such as multiple choice, multiple answer, true/false, numeric, fill-in-the-blank, etc. You can learn more about these two types of quizzes here:
