Is there a way to prevent a student from "right ckicking" on a Canvas quiz question. Once the student right clicks and saves the text they can paste the question into Chat GPT to obtain the correct answer.

There is no built-in functionality to do this in Canvas. You would need to require a third-party secure browser product such as Proctorio or Respondus LockDown Browser, which is something that would have to be licensed/integrated by your school.
