Is there a way for a student in a course with multiple instructors to send an email to them without having to add each individual instructor in the "To" field (e.g. shared inbox) so all of the instructors can monitor the inbox?

I don't believe there is quite the concept of a "shared inbox" for multiple users in Canvas. If a student wants to message all of the teachers in a course though, they should be able to just use the "all" option after selecting the course and teacher role, as shown here:
This should create basically a group conversation thread, which is similar to what I'd call a shared inbox, and does not require the student to select every teacher. The option to message all like this may be limited by some permission settings though, so you may need to work with your school/institution Canvas teams if your students don't see this option.

Suggestion: IB and AP are moving to all digital. Currently, if we want peer reviews for in class essays, we have to use the assignment feature. Could we use the quizzes feature so we can use the lockdown browser AND also assign peer reviews? This would help support the integrity of the timed essay.
