How can I delete the History link from my students' Navigation so they no longer have access to view old tests and share the tests with students who have yet to take it?

If you are referencing the 'History' button located on the global navigation bar (the left side bar), unfortunately you are unable to remove this button, at least without root-account administrative level permission that has the ability to use custom CSS or JavaScript in your school's Canvas instance. If you are using free for teacher on the other hand, then no change can occur regardless.
I recommend that you hide the answers and prevent students from seeing the test questions upon submission of the test, and only allowing them to see their scores (if desired). This will prevent students from accessing any information that you don't want them having upon submission.
