Can you set an Out of Office auto reply to students who msg you through Canvas when you are not at work?

This is possible but is a Canvas root account setting that an LMS administrator needs to enable. The functionality became available in the middle of July 2024 and is documented in the release notes at https://community.canvaslms.com/t5/Canvas-Releases/Canvas-Release-Notes-2024-07-20/ta-p/606797.
