If I reconfigure a Mastery Path after students have taken a quiz, are their scores for that quiz erased? If so, how can I get those scores restored?

I don't use Mastery Paths, but Canvas is really good about hanging on to scores. I would not expect that they would delete any scores when you reconfigure mastery paths as the mastery path uses the assignment to decide upon the path, but the assignment is an assignment even if there is no mastery path tied to it.
I think the real concern with changing Mastery Paths is it not picking up changes as opposed to losing grades. The documentation is full of warnings like
That second one implies that once a student completes a conditional item, it counts for them, even if it later turns out that they don't need it.
I might have this wrong as I am just getting this from the documentation (see Modules in the Canvas Instructor Guide) and experience with other parts of Canvas.

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
