If you want to separate the grade book by semester, you must enter due dates, and you also must have Grading Periods enabled in the course. See https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-use-grading-periods-in-a-course/ta-p/1030
Grading periods are something that must be set up by your Canvas administrator for the whole system.
