I don't believe this is possible at the moment. Here are a few different threads that I found which support this:

No es posible eliminarlo y pienso que hay una buena razón para esto: es bueno tener documentado lo que los estudiantes entregan -- aunque sea por equivocación -- y especialmente si el estudiante la hace rutinariamente. De esa manera tienes evidencia y puedes tener una conversación con el estudiante (o si es menor de edad, con los padres) sobre las entregas incorrectas.
Lo bueno es que se puede dar mas intentos para entregar una tarea (no es necesario crear una tarea mas para dar un intento mas). Esto se puede hacer en los Detalles de la actividad (se puede cambiar el número de Intentos de Entrega). https://community.canvaslms.com/t5/Gu%C3%ADa-del-Instructor/C%C3%B3mo-agrego-o-edito-detalles-en-una-tarea/ta-p/2332. A mí me gusta dar 2 o 3 Intentos de Entrega en todas las Tareas justamente por si alguien entrega algo equivocado, puede entregarlo otra vez. De esta manera me ahorro el tiempo de tener que cambiar ese "setting" y puedo ver todos los intentos entregado. El intento más reciente es el que corrijo.
