As you can see from the top paragraph in the light blue box at the top of either of these Guides, it might be the case that your Canvas administrator(s) has/have turned off the ability to add a picture to your Canvas account. This would be a question that you'd need to address with them.

I am setting up my courses for this year and I realized that when I opend the mastery-based gradebook, there is no color coding. When I open last years's course that had color-coding last time I opened it in the spring, it no longer has colors. The colors appear in the individual student view, but not in the all class view.
