How do I remove an old class off of canvas?

This may depend on policies that your school has in place whether or not they can remove old courses from your list in Canvas. I would recommend that you have a conversation with your school's Online Learning / eLearning / Distance Learning team at your school to see what they have to say and what they might be able to do for you with respect to your past courses.
Also, I'm not sure if you are aware of this or not, but you can "favorite" courses by placing a yellow star next to a course on your "Courses" >> "All Courses" screen so that it shows up on your Canvas Dashboard. If you do not have any courses marked with a star, then up to 20 courses will automatically appear on your Dashboard. As soon as you mark one or more courses with a star on your "All Courses" screen, then only those courses will show up on your Dashboard.
