I have an assignment posted for the student, which is open for a week. In my grade book, all my students have the full points listed.
However, when I click the student's name, the exam has not started yet.
How could this happen?

Thank you for contacting the Instructure Community. We're sorry to hear you've been experiencing issues with students receiving full points despite not taking a quiz. There is only two options that could have caused this since you did enter grades for the students manually nor did they take the quiz.
First, you may have inadvertently set a default grade in the gradebook. This could have caused all of the students to receive full points despite not taking the quiz. Here is the Canvas guide:

Secondly (more likely) could have been a missing policy in place. Did you copy the quiz over from another course or previous semester? If so, did you change the due date in the old course assignment prior to copying/importing? If you did not, and you have a missing policy in place for the gradebook, you may have accidentally given everyone full points. Teachers occasionally do this without even knowing that the policy is set in place and set to give everyone 100% on an assignment after a due date. You can check that by looking at the grade posting policy for the course - if it is enabled and set to 100 - that is what happened.
