It sounds like you are inquiring about the "Product Tour" feature option that can be enabled/disabled at the Canvas account level:
If this is the case, you will need to reach out to the University of North Texas' Canvas administrator to see if they would be willing to turn it off for you (which would also turn it off for everyone else who teaches at the UNT). I am setting up my courses for this year and I realized that when I opend the mastery-based gradebook, there is no color coding. When I open last years's course that had color-coding last time I opened it in the spring, it no longer has colors. The colors appear in the individual student view, but not in the all class view.
