When in the Speedgrader, you can use the gear icon to find those settings.

Here is a guide on how to enable anonymous grading, but the process to disable is fairly similar.

In "options" you must uncheck the box for " Hide student names in the SpeedGrader."

I use Turnitin in comments on papers because my old commenting system is there, and I found a hidden little setting in the Turnitin optional settings that turns anonymous grading on or off from there, and that seems like it may be what I was needing. Thanks for the replies!
