Where do I go in Canvas to set up auto-grading for an assignment ?

Are you perhaps using Canvas Studio, an add-on feature that allows users to create quizzes from videos?

As far as I know there is no auto-grading of assignments. You can have quizzes (which are also in the assignment category of things on Canvas) which are auto graded. However regular assignments would have to be graded by hand - unless it is an assignment where the students just have to submit something(you don't look at it) - then you could use the set default grade feature.
