How can I set the Canvas to check the homework assignments done by the students are copy/past or not?

You'll only have this option if your school/institution subscribes to a plagiarism checking service (like Turnitin or Copyleaks). If one of those is available you'll usually see a "Plagiarism Review" option when editing the assignment, or have an option to create an external tool assignment via the plagiarism detection vendor. Since community users won't really know what software your school/institution has purchased, it may be best to ask your local support team (usually in the Digital Education, IT, or eLearning areas) about this to get a more exact answer.
