I would like to know if I can get access to courses that I have finished that way I can write every assignment out.

It's up to each school/institution to decide whether previous courses remain available to students or not (Canvas is pretty flexible and allows many different options). Unfortunately, we here in the global Instructure Community aren't able to know each school/institution's policies. I would recommend that you reach out to your local Canvas team (usually in the eLearning, IT, Digital Education, or similar departments) to ask about this.

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
