As a teacher, is there a way to see if a student has taken all attempts of an assignment in the gradebook. My department knows that we can find this information in speedgrader or under moderate of the assignment, but would like to have a way to see it in the gradebook easily (ie: like have a checkmark in the corner of the gradebox or something similar.) I think the only methods are the ones that you mentioned, which include using the moderate page or by using speedgrader. Those two would be your best options for determining how many attempts a student used for an assignment / quiz.

Another option, which is not supported by Instructure/Canvas but does work is to use the "Canvas LMS Mods" extension that is available for Chrome-based web browser. This is an extension written by @JamesSekcienski / @Code-with-Ski and something that I use regularly for a variety of purposes.
When the extension is enabled and you are in the "Statistics" area of a course, there is a separate "User Access Report" which displays "Times Participated" for each applicable item in a course.
