I'm assuming you can make one of the question an essay type. And then students can click the video button in the rich content editor (to use Canvas Studio or whatever) to record or upload a video response that will be embedded in their answer.
Alternatively, you could have a File Upload type question to upload a video file, or a simple text question where they paste a link to their video.
