Welcome to the Instructure Community, it's great to have you here. I could be wrong, but I'm fairly certain that parent observers don't have access to see any kind of login/activity history for their observees. You'd probably want to reach out to the local school/institution to see if there is anything they'd be willing to provide you along those lines, as it's generally an administrative task to access info like that.

As said by @chriscas, this is something that observers (parents) do not have direct access to unless a school has developed some sort of customized way of obtaining it.
If they have not developed something in-house, you would need to ask your school's Canvas team and ask them to review the login and logout activity for your child/student as described in the https://community.canvaslms.com/t5/Admin-Guide/How-do-I-view-login-and-logout-activity-for-a-user-in-an-account/ta-p/229 support article. They might also be able to provide you with data related to page views (https://community.canvaslms.com/t5/Admin-Guide/How-do-I-view-the-page-views-for-a-user-in-an-account/ta-p/93) and course access reports (https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-view-the-course-access-report-for-an-individual-user/ta-p/754).
