If you are unable to reach your professor via Canvas because a course is no longer available, you may need to resort to other ways to contact this person. For example, does your school have a staff webpage that lists instructors and/or contact information? Have you tried reaching out to your school's Online Learning / eLearning / Distance Education department to see if they might be able to contact your instructor on your behalf? When I went to the SJSU website, I used the search bar at the top of their website, and I searched for the word "staff". The first result was a page to search for staff members: SJSU Directory. I also used that same search bar on the "home" page to search for "Canvas", and I got the following result which may also be helpful: Canvas - SJSU - School of Information.
