The Canvas Teacher iOS app will not load for me. (See attached screenshot.)

I am sorry that nobody has responded to your message until now. I really hope this issue has been resolved for you by now!
I've experienced this behavior when I first download the app, it sometimes takes a hot moment to load. However, if you have poor WiFi connection or signal, the app will also generally take longer to load everything in since it needs a stable connection for it to do so.
I'm just curious -- did this occur each time you would open the app? Or was it only a one or two time thing and it eventually resolved itself.
