The missing course may not be published (and not visible to students), or you may have "favorited" one course in your Dashboard, which results "un-favorited" courses not being shown.
You can see all of your courses, even if they are not published or not favorited, using the steps in this article called "How do I view all my Canvas courses?"

As "Ideas" section is gone (at least for now), I'm posting a feature request here. Mobile app shows a list of students who have submitted or not submitted a quiz/assignment. Would be good to have this in web version as well as way to export csv.
