It's really frustrating to have to enter my password every single time I return to the site. I'm on a private machine that no one else has access to, why can't I change a setting to leave me logged in until I log out?

By default, the Canvas system does not have an auto logout feature. I have used the same login session (as an admin or my other "regular" account) for several days without needing to log back in.
There could be something that has been implemented by your institution. Because of that, I would recommend that you reach out to your institution's Canvas team and ask if they are willing to do a screen sharing session with you so that you can show them what you are doing and what is happening.
