When importing a quiz from an older course, how do I update the quiz from the old format to the new format? I'm still seeing it the old way and want to see the Build selection so that I can print the quiz and the key.

You will need to check with your school's Canvas administrator(s) to see if they have enabled the New Quizzes interface yet. Not all schools have done so, and this may be why you cannot see/use New Quizzes.
